{"id":47,"date":"2010-10-12T22:42:29","date_gmt":"2010-10-12T12:42:29","guid":{"rendered":"http:\/\/www.mcmonkey.net\/blog\/?p=47"},"modified":"2010-10-12T22:44:34","modified_gmt":"2010-10-12T12:44:34","slug":"ribs","status":"publish","type":"post","link":"http:\/\/www.mcmonkey.net\/blog\/?p=47","title":{"rendered":"Ribs"},"content":{"rendered":"<p>A good friend and I seem to have made it our lives work to only be good at 1 thing.<br \/>\nEating, specifically eating pork ribs.<\/p>\n<p>We have eaten ribs in London, Edinburgh, Glasgow, New Jersey, <a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/US\/SightSeeing\/IMG_5416.jpg>New<\/a> <a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/US\/SightSeeing\/IMG_5418.jpg>York<\/a>, Orlando and countless places in Sydney and other parts of Australia.<\/p>\n<p>Recently we made the potentially disastrous decision to attempt to cook our own ribs.<br \/>\nBoth of us have eaten ribs cooked at home before but never have they been anywhere near as good as the ones you get from a decent restaurant. More often than not there is little to no meat and what meat is on the bone is tough and chewy.<br \/>\n<!--more--><br \/>\nOur mission was to change this.<br \/>\nWith a little bit of help from Google and (it pains me to say this) Masterchef we felt we had a handle on the best way to get a good result.<\/p>\n<p>After buying some nice looking ribs from the local butcher I set about making a dry rub. Thanks to Google I found the below recipe which sounded decent.<\/p>\n<p>Memphis Style Rib Rub<br \/>\n4 teaspoons paprika<br \/>\n2 teaspoons salt<br \/>\n2 teaspoons onion powder<br \/>\n2 teaspoons fresh ground black pepper<br \/>\n1 teaspoons cayenne<br \/>\nMix ingredients together. Store in an airtight container. Spread evenly on prepared ribs that have been patted dry and let sit until the rub appears moist.<\/p>\n<p>To this I added about 3 heaped teaspoons of brown sugar.<\/p>\n<p>This made enough for a generous amount on 2 full racks of baby back pork ribs. I doubled it to get enough for the 3 racks we had to cook.<\/p>\n<p>The end result<\/p>\n<p><a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3929.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3929.jpg><\/img><\/a><br \/>\nThis was after sitting overnight in the container.<\/p>\n<p>Our chosen method for cooked was a trusty old Webber Kettle. So while the coals were heating up<br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3931.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3931.jpg><\/img><\/a><\/p>\n<p>We set about getting the ribs ready for the grill.<br \/>\nCover with generous amounts of your favourite BBQ sauce (or in our case sauces)<br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3936.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3936.jpg><\/img><\/a><br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3938.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3938.jpg><\/img><\/a><\/p>\n<p>And take them out to the now ready grill.<\/p>\n<p><a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3941.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3941.jpg><\/img><\/a><\/p>\n<p>Place the ribs on the cool side of the grill<br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3943.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3943.jpg><\/img><\/a><\/p>\n<p>Cover and let cook at a low temperature for several hours.<br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3944.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3944.jpg><\/img><\/a><\/p>\n<p>Keep the dog away from the BBQ!<br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3933.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3933.jpg><\/img><\/a><\/p>\n<p>Check back on them periodically and baste with sauce as desired.<br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3947.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3947.jpg><\/img><\/a><\/p>\n<p>Served with an ice cold beer and your choice of sides (chips in our case)<br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3951.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3951.jpg><\/img><\/a><br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3952.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3952.jpg><\/img><\/a><\/p>\n<p>Enjoy your lunch.<br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3955.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3955.jpg><\/img><\/a><br \/>\n<a href=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/IMG_3956.jpg><img src=http:\/\/mcmonkey.net\/gallery\/albums\/upload\/ribs\/normal_IMG_3956.jpg><\/img><\/a><\/p>\n<p>The end result was in both our opinions, restaurant quality ribs.
